Favorite thing this week - J.T. Was on Jimmy Fallon every night this week.They made us wait until Friday, but it finally came: History of RapPart 4!!!! Luck 'O The Irish Brownie




With St. Patrick's Day approaching, I decided to make a homemade Irish dinner tonight. I made a traditional corned beef and cabbage with potatoes and Irish soda bread! One of my favorite meals and I only make it once a year! Tonight was the night.

For a surprise, I made Luck 'O The Irish Brownies. I got the recipe from my favorite web site/app which is AllRecipes. I have listed the entire recipe below! It is very good and completely different from any dessert I have ever made. The mint is very refreshing and its a great dessert for a heavy Irish meal!! One thing I would point out is the chilling is very important to firm it up. Also when you serve the dish, cut small pieces! It's very rich. Just a couple bites is all you need! My husband liked it and said it tastes like something from a fancy restaurant, pretty good review!

Luck 'O The Irish Brownie:

36 Servings, Prep Time: 30 Minutes, Cook Time: 25 Minutes

Description

This decadent dessert is perfect for a St. Patrick's day celebration full of green!

Ingredients

4 (1 ounce) squares unsweetened chocolate
1 cup margarine, softened
2 cups white sugar
3 eggs
2 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup butter, softened
4 cups confectioners' sugar
2 tablespoons milk, or as needed
1 1/2 teaspoons peppermint extract
6 drops green food coloring
1 1/3 cups semisweet chocolate chips
6 tablespoons butter
1 tablespoon vanilla extract
Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Melt the unsweetened chocolate in a cup or small bowl in the microwave. Stir at 15 second intervals until chocolate is smooth. Allow to cool slightly. Transfer to a large bowl, and stir in the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Stir in the flour just until blended. Pour the batter into the prepared dish and spread evenly.
Bake in the preheated oven until the surface appears dry and the sides are beginning to pull away from the edges of the pan, 20 to 25 minutes. The brownies may look more like cake and may jiggle slightly in the center- this is normal. Remove from the oven and cool in the pan set over a wire rack.
To make the middle layer, beat 1/2 cup of butter with confectioners' sugar in a large bowl using an electric mixer. Add milk as needed to get a spreadable consistency. Stir in the peppermint extract and green food coloring. Spread this over the cooled pan of brownies. Refrigerate for 30 minutes
In a microwave-safe bowl, microwave chocolate chips with the butter until melted. Stir every 20 seconds until chocolate is smooth. Stir in vanilla and then pour over the chilled brownies and quickly spread to cover the surface. Cool again until firm, about 10 minutes, then cut into squares and serve.

Mammograms and margaritas

Today is mammogram day for my mom who is 65! So to make it a fun day, I turned it in to mammograms and margaritas day!!!

So after her mammogram, we did a little shopping and then had lunch and margaritas!!! She got a call a couple hours later and was informed that everything was normal!! I think it's great that they let you know the same day that your mammogram is normal. In the past, there has been a lot of needless worrying and waiting!!!

So make your mammogram day something you look forward to!! Go shopping, drink margaritas, get a manicure!!! You deserve it!!!

Green nails - OPI

So with emerald being the color of the year from Pantone, I'm loving OPI's shades - "Jade is the New Black" and "Don't Mess With OPI."  Love how the green looks on nails.  It's fresh, hip, and great for spring.

Here is my sister's nails with a great shade - mint color!  I love this color for everything right now, shirts, shoes, and nails!!


Here are my nails with "Don't Mess With OPI."  I think it looks great.  I think I'll pair it with a rich emerald blouse.  Not a color I usually wear, but right now I'm obsessed with it!!!!!  (and yes I have a yellow gold wedding ring -- and I love it and I'm not changing it to silver or platinum -- but that's a whole other story for later!!!)

Spring must haves


We got another round of snow yesterday, but spring is in the air.  To recover from the cold of winter, if you are like me, your lips are chapped and cracked.  I'm loving EOS lip balm.  They look like Easter eggs.  The top screws off and you have lip balm.



They come in different colors and scents.  Right now I have summer fruit shown above.  It's a light scent and the lip balm will heal your lips.  The other thing I love is it's not so small that it disappears in your purse (know what I mean???).  Get all the colors and put one by your bed, one in the bathroom, one in your purse, one at the office!!!!  Love these!!!!  Click here to visit their web site!!!

Suit and Tie - Spring

Three things I'm obsessed with right now:  1)  J.T., Justin Timberlake.  Suit and Tie - you must download the song.  Love it so much and love his suit, black and white.


2)  Audrey Hepburn - black dress, hair up, jewels and pearls, big sunglasses.  Classic look.  I'm obsessed with the jewelry and hair.



3)  Beyonce at the superbowl - love the black lace!  Love her hair, too!
